Sweet 'n Hot Onion & Pepper Relish

                 Amount  Measure       Ingredient -- Preparation Method

                 1              large  red bell peppers -- finely chopped
                 2               cups  diced tomatoes
                 2              large  onion -- finely chopped
                    3/4           cup  Jalapeno peppers -- finely chopped
                    3/4           cup  distilled vinegar
                    1/4           cup  water
                 3        tablespoons  salt
                 1           teaspoon  fajita spice
                    1/2      teaspoon  allspice
                 2 3/4            cup  sugar
                 1                box  Sure Jell

               Combine all ingredients and bring to a boil.  Continue cook on a high
               simmer for approximately 30 minutes.  Fill jars.  Makes about 4 pints.

               I put the red bell peppers, onion and Jalapeno peppers in the blender and
               chop them that way.  The diced tomatoes I buy already that way in the can.
