Tomato and Green Chile Salsa

                 Amount  Measure       Ingredient -- Preparation Method

                 3               cups  tomatoes -- peeled and chopped
                 3               cups  green chiles -- seeded and chopped
                    3/4           cup  onion -- chopped
                 1                     jalapeno chile pepper -- seeded and minced
                 6             cloves  garlic -- finely chopped
                 1 1/2           cups  seasoned rice vinegar
                 1 1/2      teaspoons  salt

               Combine all ingredients in a large saucepan and heat, stirring frequently,
               until mixture boils.  Reduce heat and simmer for 20 minutes, stirring
               occasionally.  Ladle into pint jars, leaving 1/2-inch headspace.  Adjust
               lids and process in a boiling water canner 15 minutes.

               NOTES : Made this on 10/31/02.  I would drain the tomatoes.  It
                       was awfully watery.  I ended up draining the salsa,
                       filling the jars most of the way, then adding liquid back
                       in.  But it turned out good!
