Cottage Cheese Pancakes

1 1/2 cups flour
1/4 cup packed brown sugar
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 cup cottage cheese
1 cup milk
2 eggs
3 Tbsp. butter -- melted
1/2 tsp. vanilla
In a medium bowl, whisk together the flour, brown sugar, baking powder,
baking soda, and salt.
In another bowl whisk together the cottage cheese, milk, eggs, melted
butter, and vanilla. Blend well. Pour the liquid ingredients over the dry
ingredients and mix with the whisk until everything is just combined. The
batter will be thick and lumpy. Preheat griddle to 350. Spray with oil.
Cook on each side until golden brown.
These are really great. A sturdy, substantial, not flimsy pancake, but
still tender. I highly recommend. The cottage cheese disappears into them
and gives them body. I used non-fat cottage cheese and 1 percent milk.
Only change I made was to increase vanilla to 1 teaspoon.

Just reading the recipe made me hungry. I am going to make some for myself
again. These are just too great! Especially with applesauce on top. You
