77www.i-am-magazine.comLA BANDEJA PAISA - ANTIOQUIAProbably The Bandeja Paisa is the mostinternationally known typical Colombiandish and although it is a calorie bomb, itis a delight impossible to resist.In str u ctio n sIn g re d ie n ts1 garlic cloveSalt to taste4 eggsoil200 grams of big-headonion3 tomatoes2 avocados1 bay leaf4 sausages1 pound rice2 ripe plantains350 grams of minced beef1 pound cargo bean4 corn arepas1 pinch cumin1 pound pork rindSoak the beans in a bowl of water.Leave them overnight.To prepare the rice, add 2 cups of riceand 4 cups of water. When the waterboils add the rice and bay leaf. Cookover medium heat for 15 minutes. Turnoff the heat and let stand.Slice the bananas and fry until goldenbrown, then let stand on a plate on apaper towel.Prepare the %u201chogao%u201d. Cut the onionand tomato into cubes, and chop thegarlic into very small pieces. Saut%u00e9the onion in oil, season with salt, andadd the tomato, add garlic, andcumin, mix well, and cook for 6minutes.Drain the beans, put them in thepressure cooker, with the %u201chogao%u201d.Cover with water and let cook for 30minutes.In a frying pan cook the meat andsausages until golden brown. In thesame pan fry the eggs. In anotherfrying pan fry the arepas.Plate the rice, beans, plantain, mincedmeat, chorizo, pork rinds, and egg (ontop of the rice). Cut the avocado andadd the corn arepas and ready toenjoy!
