DIRECTIONS:
1. Preheat oven to 350 F.
2. Place the chicken breasts on a foil-lined baking pan,
cut side up.
3. Season both sides with a little salt and pepper. Set aside.
4. In a medium bowl, combine the mushrooms, carrot, bell
pepper, sweet onion, turnip, spinach, and Parmesan. Drizzle
with a little olive oil and add 1 to 2 teaspoons of your Herbs
de Province seasoning.
5. Mix well.
6. Spoon some of the stuffing onto one-half of a chicken
breast and fold the other half over it so the stuffing is inside
the breast. Do the same with the other 3 breasts. You can
stuff with as much or as little as you like. Any remaining
stuffing can be set in the pan beside the breasts and roasted
for a side dish.
7. Cook for about 30 minutes or until the chicken is done.
Check at around 20 minutes since some ovens may vary.
8. Remove from the oven and serve immediately.
9. Top with a creamy mushroom sauce if desired
(stuffed portobellos).
Cooking for One: These chicken breasts can be cooked and
then frozen so keep that option in mind. If you only want to
cook a single breast, cut the ingredients by a quarter, and if
the recipe calls for ¼ cup of something, use
1 to 2 tablespoons instead.
