Stuffed Chicken Breasts







                     Serving Size 4













                     Mushrooms are a good source of selenium








                     and vitamin D but if they are not your thing,







                     substitute with chopped zucchini or even an








                     almond flour and water paste instead.

















                     INGREDIENTS:





                     4 chicken breasts (about 4 ounces each), butterflied and gently






                     flattened







                     1 cup fresh button or portobello mushrooms, chopped






                     ½ cup carrot, chopped






                     ¼ cup red bell pepper, chopped






                     ¼ cup sweet onion, chopped







                     ¼ cup turnip, chopped (optional)






                     1 cup fresh baby spinach, rinsed and dried






                     ½ cup Parmesan cheese






                     1 tsp sea salt







                     Coarse ground black pepper
