Weekend Egg Bake Using Leftovers







           INGREDIENTS                                                INSTRUCTIONS



           •   ½ Onion diced                                    1.  Preheat oven to 400°F.
           •   2T olive oil, butter or leftover bacon fat       2.  Sauté onions in your favorite fat in a large
           •   1–2 cups cooked or raw veggies                       cast iron or oven proof pan

           •   ½ bag tater tots or other shredded frozen
              potatoes                                          3.  Add leftover cooked veggies of your choice
           •   1 cup chopped leftover steak or chicken              (broccoli, bell peppers, mushrooms, zucchini,
                                                                    carrots…whatever you have leftover from the
           •   Salt and pepper to taste                             night before
           •   6 eggs
           •   ½ c  cup shredded cheese                         4.  Add in frozen potatoes. Cook until it is
                                                                    defrosted and starts to cook. Season well

                                                                5.  Place in oven for 15 minutes to continue to
                                                                    brown
