Plantain Piñón                               Directions



        6 servings          1 hr 10 min                   1. Preheat oven to 350 degrees fahrenheit. Peel

                                                            plantains and cut each one lengthwise into
                                                            thin slices, from tip to tip.

    Ingredients                                          2. In skillet, fry plantain slices until golden-

                                                            brown on each side. Then place on paper
    6 ripe plantains                                        towels, to remove any excess oil.


    1 cup vegetable oil                                  3.  Add oil to skillet over medium-heat and sauté

    2 tbsp sofrito                                          sofrito mix, tomato sauce, olives, seasonings

    4 tbsp tomato sauce                                     and cumin for two minutes.
                                                         4. Add ground beef and season as desired,

                                                            continue cooking for 10-15 minutes.
    1 tsp cilantro and achiote                           5. While meat is cooking, grease baking dish with

                                                            when preparing lasagna. Completely cover

    1 can green beans                                    7. Repeat layers as desired, with plantains as final

                                                         8. Bake for 30 minutes. Let sit after removing
