Blueberry Oat Muffins









              What better way to start your morning than with a hot cup of coffee and a blueberry
              muffin?

              Ingredients:                     Directions:

              - 2 cups wheat flour               1. Combine flour, baking soda, salt, and coconut sugar
              - 1 1/2 tsp baking soda              into a bowl and mix well.
                                                 2. Take the 4 bananas and mash with a fork to create a
              - 1/2 tsp salt
                                                   slightly smooth texture.
              - 4 overripe bananas
                                                 3. Add bananas and remainder of ingredients into a
              - 1 cup  coconut sugar               bowl.

              - 1 Tbs of vanilla extract         4. Mix all ingredients together until a smooth mixture is
              - 3/4 cup coconut oil or             formed. Add more oil if too dry.
              avocado oil, melted and cooled 5.    Grease muffin pan and spoon mixture evenly.

              - 3 eggs                           6. Top with additional chopped nuts and lightly spray oil
                                                   to help in the baking.
              - 1/2 cup pecans, chopped
                                                 7. Bake at 350 degrees for 30 minutes or until golden
              - 1 cup of blueberries
                                                   brown.
             Tip: You can lightly coat the blueberries in flour to help them from not all sinking to the

             bottom of the muffin.
