Israeli Couscous Salad

             This might not be your typical salad, but it will certainly bring the flavor and will help
             increase your vegetable intake while being simple to make.



             Ingredients:
             - ½ cucumber, chopped                           1.5 tsp tarragon
             3 green onions, chopped                         2 Tbsp lemon juice
             ½ red pepper, chopped                           2 Tbsp olive oil
             10 cherry tomatoes, sliced                      1 Tbsp red wine vinegar
             ¼ cup chopped black olives                      3 oz feta cheese (optional)
             1.5 tsp oregano                                 1.5 cup couscous, cooked according to
             1.5 parsley                                     directions


             Directions:
               1. Cook couscous according to directions and add to a large bowl
               2. Add all chopped ingredients on top of couscous
               3. Add spices. lemon juice, oil, and red wine vinegar. Mix thoroughly
               4. Add feta on top (optional)
