Vinegar Coleslaw


              A quick and easy side, perfect for your next cookout.


              Ingredients:
                                                              - 1/3 cup olive oil
              - 1 head cabbage, chopped
                                                              - 1/4 cup apple cider vinegar
              - 1 head red cabbage, chopped
                                                              - 2 Tbsp sweet mustard
              - 1 green or yellow pepper, chopped
                                                              - 1-2 tsp honey
              - 4-6 green onions, chopped
                                                              - Celery salt and pepper to taste
              - 1 cup banana peppers, chopped

              Directions:

                1. Combine all veggies into a large mixing bowl and toss well.
                2. In a separate bowl, add olive oil, vinegar, mustard, and honey to desired taste.

                3. Pour mixture over vegetables and coat well.

                4. Add more mustard or honey if you would like.




              Marinated Vegetables


              This might not be your typical salad, but it will certainly bring the flavor and will help
              increase your vegetable intake.

              Marinade Ingredients:                       Veggies:

              - ¼ cup balsamic vinegar                    - 1 red pepper, chopped
              - ¼ cup olive oil                           - 1 green pepper, chopped
              - 1 Tbs parsley                             - 1 sweet onion, chopped

              - Juice from 1 lemon (3 Tbs)                - ½ zucchini, chopped
              - 2 tsp Dijon mustard                       - 8 grape tomatoes, halved

              - 2 tsp thyme                               - ½ yellow squash, chopped
              - 3 garlic cloves, minced


              Directions:

               1. Mix all marinade ingredients in a small bowl and let sit for at least 15 minutes.
               2. In a large bowl combine all veggies.

               3. Pour Marinade over veggies and toss thoroughly.
               4. Allow marinating for at least 24 hours for best taste
