       4.0  BACK OF HOUSE






       Beyond the line of the counter, our stores must remain well
       finished and functional for the benefit of our staff.

       Back of house areas should include:

       •   a store room for dry goods
       •   a coldroom
       •   a manager’s office
       •   a wash-up
       •   staff change, toilet and rest facilities

       Back of house areas should be appropriately sized and laid
       out to allow for future growth and operational efficiency.


       Generally, back of house finishes should be a white lay in
       ceiling, safety grade floor vinyl and simple wall finishes:

       •   For back of house areas that are within the line of sight
          of customers, the walls should be finished in the same
          white tile as the bake & serve area.

       •   Within back of house areas that are not directly visible
          from the counter / customer area, the walls should be
          finished with hygienic cladding.
