       Minestrone Soup



        I got tired of the pricey and sub-par canned minestrone soup, so I reverse engineered one of my
        favourites to come up with this. I’m pretty sure if you look up the word “hearty” in the dictionary, you
        will find a picture of this soup.







        INGREDIENTS

        • ½ a yellow onion, chopped                                               Makes 4 servings
        • 1 large carrot, chopped
        • 2 stalks of celery, chopped                                             327 calories
        • 2 cloves of garlic, minced
        • 1 tsp fennel                                                            Macros:
        • 1 tsp cumin                                                             18g Protein 61g Carbs 3g Fat
        • 1 tsp savory
        • 1 tsp onion powder
        • 1 tsp garlic powder
        • 1 tsp black pepper
        • 1 tsp oregano
        •   cups ( .  liters) of vegetable broth
        •   large can of crushed or diced tomatoes (   fl
        oz. or     ml)
        •   cups (   g) your favourite spiral pasta - I use
        protein pasta
        • 1 cup (156g) of sliced brussel sprouts
        • 1 can of white beans, drained and rinsed
        • ½ tsp salt
        • 1 cup (160g) frozen peas (optional)
