METHOD
1. Sauté chopped onion, carrot, celery, and garlic together with the spices for 10 minutes, or until the
onion is soft. Add a few tablespoons of crushed or diced tomatos as needed to help sauté.
2. Once the veggies are soft add the remaining can of diced or crushed tomatoes and vegetable
broth to the pot. Bring to a boil and simmer for 20 minutes.
3. Bring soup to a boil and add pasta, brussel sprouts, and white beans.
. Cook for another minutes or until pasta is done. Add salt and stir in cup of frozen peas and
remove from heat. Serve hot or let cool and refrigerate.
