Dinner





















       Lentil Loaf



        Crystal and I came up with this version of a lentil loaf for a family holiday dinner years ago, but we
        love it at any time of the year. It’s great as a main dish but if there are any leftovers it is incredible
        on a bun with lettuce, tomato and spicy mustard the next day.







        INGREDIENTS

        Veggie saute:                                                             Makes 6 servings
        • 1 carrot, chopped
        • 2 stalks of celery, chopped                                             332 calories per serving
        • ½ red onion, chopped
        Lentil mix:                                                               Macros per serving :
        •   cups cooked french lentils (appro .   cup or    g                     13g Protein 47g Carbs 10g Fat
        dry lentils)
        •   cup (   g) rolled oats, ground into oat flour
        • ½ cup (40g) walnuts, ground up                             Topping: Ketchup and BBQ sauce to taste.
        •   tbsp ground fla  seed
        • 1 tsp salt
        • ½ tbsp thyme
        • ½ tbsp cumin
        • ½ tbsp onion powder
        • ½ tbsp garlic powder
        •   cup (  g) frozen peas
        • 2 tbsp tahini
        • 2 tbsp tomato paste
        • ½ cup (125ml) BBQ sauce
        • 2 tsp vegan worcestershire sauce
