       Shredded Tofu & Refried Bean Tacos



        Who knew you could shred tofu? Well you can and it’s amazing. The way it bakes up and get’s a bit
        crispy on the edges is a thing of beauty. I think you will love these high protein taco’s as much as
        me.






        INGREDIENTS

        Shredded tofu:                                                            Makes 4 tacos
        •   block firm tofu (   g)
        •   cup (  g) chopped yellow onion                                        248 calories per taco (excluding
                                                                                  additional toppings)
        • ¼ cup (23g) chopped red bell pepper
        • ¾ tsp ground cumin                                                      Macros:
        • 1 tsp paprika                                                           13g Protein 32g Carbs 8g Fat
        • ½ tsp garlic powder
        • ½ tsp onion powder
        • ½ tsp salt                                                Optional taco additions:
        • ½ tsp black pepper
                                                                    • Shredded cabbage
                                                                    • Chopped green onion
        Refried beans:                                              • Chopped tomatoes
        • 1 can of pinto beans                                      • Chopped cilantro
        •   cup (  . g) of yellow onion, chopped                    • Salsa
        • ¼ cup (60ml) salsa                                        • Vegan cheese
        • 1 clove of garlic, minced
        • salt and pepper to taste


        1 package of taco shells (either hard or soft)
