       Crystal’s Quick And Delicious Lasagna



        This quick and healthy lasagna is a crowd pleaser and so nutritious! Even the most critical eaters
        will enjoy this one. Since it’s high in protein and makes a few servings, it’s great for meal prepping
        and big family dinners.







        INGREDIENTS

        Sauce ingredients:                                                        Makes 6 large servings
        • 1 tsp olive oil (optional)
        • ½ a red onion, chopped                                                  345 calories per serving
        •   large cremini mushrooms, chopped

        • 1 medium sized zucchini, chopped                                        Macros per serving:
        • 1 red bell pepper, chopped                                              21g Protein 51g Carbs 7g Fat
        • 1 large handful of kale, chopped
        •       ml  ar of vegan pasta sauce

        •   large can (   oz) fire roasted tomatoes or              1 package of lasagna sheets.
        regular canned diced tomatoes
                                                                   PLEASE read the box - you may need to pre cook your
                                                                   noodles or they may be oven ready. We use lentil pasta
        Tofu 'ricotta'                                             lasagna sheets that are oven ready.
        •   block firm tofu
        • 1 ½ tbsp Italian seasoning ¼ tsp black pepper
        • 1 tsp garlic powder
        • 2 tbsp nutritional yeast
        • ¼ tsp salt
        • juice of half a lemon
