       METHOD

       Preheat the oven to     F and prepare a non-stick baking sheet.


        . Shred e tra firm tofu using a cheese grater (or you can crumble it with your hands). Place in a
       medium sized mixing bowl and mix together with the spices.


       2. Place tofu mixture on a non-stick baking sheet, making sure to spread in a thin even layer. Place
       the baking sheet on the top rack and bake for 10 minutes. Once 10 minutes has passed, mix the tofu
       to make sure it cooks evenly. Bake for an additional 20 minutes. Remove from heat.


       3. While the tofu is cooking, blend together the refried beans ingredients. Once blended, add the
       bean mixture to a heated non-stick frying pan and cook for 10 minutes on medium heat. Stir often to
       prevent sticking.


       4. Chop any vegetables you want on your taco. My favourite include shredded cabbage, chopped
       green onions, tomatoes, and cilantro.


        . Build your taco! I like to put the refried beans first, followed by shredded cabbage then the
       shredded tofu. I top it off with salsa, chopped tomatoes, chopped green onion and cilantro.
