Roast Beef Sandwiches

Ingredients:
1 4-lb rump roast
2 packs of dry Lipton Soup Mix
1 tsp oregano
2 tsp sugar
1 Tbsp minced garlic
21 oz beef broth
1 (12 oz) can of beer
Put roast in crock pot. Mix other ingredients in a
bowl and stir well. Pour over roast and cook on high
for 8-9 hours until you can shred with forks. Drain
juice and finish shredding meat. Place back in crock
pot with a little of the broth to keep moist until
ready to serve.
Serve on toasted hoagie rolls with choice of cheese.

Roasted Beets

Ingredients:
4 large beets
1 Tbsp olive oil
salt and pepper to taste
Instructions:
Preheat oven to 400°F. Dice beets into ½" to ¾"
pieces. Leave the skins on for better flavor. Toss in
olive oil, salt and pepper to taste. Bake for 30-60
minutes, until you can pierce easily with a fork.
