Smothered Round Steak

                                    Ingredients:

                                    1-2 lb round beef steak
                                    salt and pepper to taste
                                    Flour
                                    Cooking Oil

                                    Cut steak into pieces. Salt and pepper to taste.
                                    Coat on all sides with flour. Brown in hot oil (do not
                                    use too much oil) Set steak aside. Brown flour in hot
                                    oil, add water, stir, replace steak. Cover and cook
                                    on medium-low heat until meat is tender and gravy
                                    has thickened. Add more water, if needed.

                                                 Sour Cream Enchiladas

                                    Ingredients:

                                    1 lb hamburger or chicken, diced and cooked
                                    ½ pint sour cream
                                    ½ cup chopped green onion
                                    3 cans cream of chicken soup
                                    1 small can green chilies
                                    10-12 tortillas
                                    ½ lb grated Cheddar cheese

                                    Mix sour cream, soup, onion and chilies. Brown and
                                    drain hamburger or sauté diced chicken until done.
                                    Fill center of each tortilla with meat, soup mix and
                                    cheese. Roll up and place in a 9x13 pan. Pour
                                    remaining sauce over top of enchiladas. Top with
                                    remaining cheese. Bake at 350°F for 30 minutes and
                                    everything is bubbly. Freezes well.
