Smothered Fried Potatoes

                                    Ingredients:

                                    Potatoes (just for yourself, about 4 small ones)
                                    1 small onion cooking oil

                                    Peel, wash and cube potatoes. Place enough oil in
                                    the skillet to cover bottom of pan plus a little more,
                                    heat. After the pan is hot, put the potatoes in and
                                    cook covered for about 10 minutes, add onions.
                                    Continue cooking on medium to low heat; covered,
                                    until the potatoes and onions are done.

                                    These potatoes will not become very brown and will
                                    mush up. Remember!!! Do not use too much oil.
                                    YUM!! YUM!! Very Good Eating!!!

                                              Smothered Hamburger Steak

                                    Ingredients:

                                    1-2 lb ground beef
                                    1 onion
                                    1 egg
                                    salt and pepper to taste
                                    flour
                                    cooking oil

                                    Mix ground beef, chopped onion, egg, salt and
                                    pepper. Make into patties, coat on all sides with
                                    flour. Brown in hot oil. Set aside. Brown a little flour
                                    in skillet, add enough water to cover meat patties.
                                    Stir, replace meat patties into skillet. Cover and
                                    cook on medium-low heat until meat is done and
                                    gravy has thickened. Do not add too much water to
                                    begin, you can add more later, if needed.
