Blueberry Coffee Cake

                                    Ingredients:

                                    Cake:

                                    2 cups flour
                                    1 cup sugar (or equal sweetness of Splenda)
                                    5 Tbsp butter
                                    3 tsp baking powder (4 tsp if using Splenda)
                                    1 tsp salt
                                    1 cup milk or buttermilk (1½ cups if using Splenda)
                                    1 egg

                                    Streusel:

                                    ½ cup brown sugar (or Splenda brown sugar mix)
                                    3 Tbsp butter
                                    ½ cup pecans
                                    ¼ cup flour

                                    Filling:

                                    3 cups blueberries

                                    Directions:
                                    1. Preheat oven to 350°F.
                                    2. Mix streusel ingredients. Set aside.
                                    3. Mix cake ingredients. Set aside.
                                    4. Grease 11x17 pan.
                                    5. Pour half of cake mixture into pan.
                                    6. Sprinkle blueberries onto batter.
                                    7. Pour the remaining batter over blueberries.
                                    8. Sprinkle streusel on top.
                                    9. Bake at 350°F for 45 minutes (done when
                                    toothpick comes out clean).
