Banana Bread

Ingredients:
Good way of getting rid of old bananas!
1½ oz butter
1½ oz shortening
4 oz sugar
1 egg beaten
orange and lemon rind grated
8 oz pie flour
2 tsp baking powder
4 bananas
2 oz walnuts roughly chopped
some caraway seeds
Directions:
Cream butter and shortening with sugar until light
and fluffy. Add egg a little at a time while
continuing mixing. Add rinds. Fold flour and baking
powder into mix with a spoon. Mash bananas with
a fork and fold into mix. Finally, add walnuts and
caraway seeds. Spoon mix into a well-greased loaf
tin. Sprinkle more caraway seeds on top.
Bake at 350°F for 50 minutes, checking after 20
minutes. When done, it will come away from pan.
Turn out of pan after cooling 10 minutes. Store in
air-tight container.
