Black Bean and Corn Salad

                                    Ingredients:

                                    2 cups black beans, drained
                                    1 (16 oz) can corn, drained
                                    6 Tbsp fresh lime juice (or juice of 1 lime)
                                    5 Tbsp vegetable oil (or olive oil)
                                    ¼ cup red onion, minced
                                    ¼ cup scallions, minced
                                    ⅛ cup parsley, minced (can substitute cilantro)
                                    1½ tsp cumin
                                    ½ cup chopped tomatoes
                                    salt and pepper

                                    Mix all ingredients, except tomatoes. together. Add
                                    salt and pepper to taste. Cover and chill. Shortly
                                    before serving toss in tomatoes. This can be made
                                    the day before serving. MAKES 6 SERVINGS.
