Chili-Lime Chickpea Salad

Ingredients:
1 can chickpeas or garbanzo beans
½ small avocado, chopped
¼ onion, chopped
½ jalapeno, chopped
½ bunch cilantro, chopped
1 garlic clove, minced
1 Tbsp EVOO
1 teaspoon cumin
½ t salt
½ t pepper
1 lime, juiced
a tiny bit of Stevia
Combine all ingredients in a bowl. Serve at room
temperature.

Corn Salad

Ingredients:
2 cans whole kernel corn, drained
4 green onions, chopped
1 large tomato, chopped
2-3 Tbsp Rotel (optional)
2 Tbsp mayonnaise
salt and pepper to taste
Mix all. Serve cold. Yield: 8 servings.
