Speedy	Noodle	and	Beef	Entree

	

Ingredients	and	Prep:
1	tablespoon	of	dried	Italian	seasoning.
½	cup	of	chopped	onion.
1	cup	of	water.
1	½	cups	of	frozen	peas	or	cut	green	beans.
2	cups	of	organic	diced	tomatoes	(undrained).
1	beef	stock	cube.
1	lb	extra-lean	ground	beef.
Noodles.
Sesame	or	coconut	oil.
	

	

Cooking	Directions:
Pour	a	bit	of	oil	into	a	large	frying	pan	or	skillet.
Place	the	beef	and	onion	in	the	pan	or	skillet	and	cook	it	over	medium-
high	heat.	Stir	frequently.
Drain	once	the	meat	is	well	cooked.
Add	the	water,	stock	cube,	tomatoes	and	Italian	seasoning.	Mix
thoroughly.
Heat	the	ingredients	to	the	boiling	point.
Add	the	peas	or	beans.
Break	up	the	noodles	and	add	them	to	the	mix.
Return	to	a	boil.
Turn	down	the	heat	to	the	low	setting	and	cover.	
Simmer	for	approximately	5	minutes.	Stir	occasionally.	The	beans	and
noodles	should	be	tender.
	
	
Serving	Instructions,	Tips	&	Variations:	This	recipe	serves	4.	
Opt	for	very	lean	--	at	least	90%	--	ground	beef	for	this	dish.
If	possible,	opt	for	organic	beef	stock	for	this	recipe.
A	number	of	different	noodle	types	are	appropriate	for	this	recipe,
including	spelt,	wheat	and	gluten-free.
