Balsamic Blackberry Chicken (GF)
Ingredients and Prep:
1/2 tablespoon of cornstarch.
1 tablespoon of coconut oil.
1 tablespoon of balsamic vinegar.
2 tablespoons of minced fresh thyme.
1/4 cup of chicken broth.
1/3 cup of blackberry fruit spread.
4 skinless and boneless chicken breast halves.
Cooking Directions:
Pour the oil into a pan and place it over medium-high heat.
Add the chicken and cook for 2 to 3 minutes on each side. The meat
should have a golden brown color when you're finished.
Combine the blackberry spread, chicken broth, balsamic vinegar and
thyme.
Whisk the ingredients.
Pour the blackberry sauce over the chicken and simmer.
Reduce the heat and simmer for approximately 15 minutes or until the
centers of the chicken breast are well cooked and no longer pink in
color.
Flip the meat periodically for even cooking.
Serving Instructions, Tips & Variations: Serve the chicken with rice or
noodles.
You may opt to use organic sunflower oil in place of coconut oil.
Use sugar-free blackberry spread for a healthier dish.
To thicken the sauce, add cornstarch and 2 teaspoons of water. Add this
to the sauce while it's simmering. Allow it to cook for approximately 1
minute or until thickened.
