Speedy	Chicken	Burgers

	
Ingredients	and	Prep:
125	grams	of	flour.
1	tablespoon	of	oil.
2	eggs.
Thyme,	tarragon	and	sage	(optional).
2	large	chicken	fillets,	boneless	and	skinless.
Buns	or	rolls.
Toppings	such	as	cheese,	tomato	and	onion.
Salt	and	pepper.

	
	

Cooking	Directions:
Take	one	chicken	fillet	and	cut	in	half	horizontally	into	two	thin,	equal-
sized	fillets.	Repeat	this	on	the	other	fillet.
Put	each	piece	of	chicken	into	a	sandwich	or	freezer	bag.
Use	a	rolling	pin	to	pound	and	flatten	the	chicken	fillets.
Season	with	the	sage,	tarragon	and	thyme	or	simply	salt	and	pepper.
Put	the	flour	into	a	bowl.
Mix	the	seasonings	and	herbs	into	the	flour.
Break	the	eggs	into	a	separate	bowl	and	whisk	lightly.
Dip	each	fillet	into	the	egg.		Allow	excess	to	drip	off.
Dip	the	chicken	piece	into	the	flour	and	seasoning	mixture.
Pour	the	oil	into	a	frying	pan	and	heat	over	medium-high	heat.
Add	the	chicken	and	cook	for	10	minutes.	Flip	the	fillets	occasionally.
Place	the	chicken	fillets	on	the	buns.
Add	toppings.

	
	

Serving	Instructions,	Tips	&	Variations:	Serve	with	salad	or	fries.
Use	the	prior	homemade	seasoning	recipe	in	place	of	the	thyme,
tarragon	and	sage	seasoning.
Instead	of	frying,	you	can	opt	to	bake	the	chicken	for	approximately	20	to
25	minutes.	It	must	be	cooked	thoroughly,	all	the	way	through	to	the
center.
