Creamy	Chicken	and	Zucchini	(GF)

	

Ingredients	and	Prep:
1/2	cup	of	sour	cream.
1/2	cup	of	water.
1	clove	of	finely-chopped	garlic.
1	cube	of	chicken	bouillon.
1	small	thinly-sliced	onion.
1	large	zucchini,	cut	into	chunks	1	pound	of	sliced	boneless	and	skinless
chicken	breasts	Salt	and	pepper.

	
	

Cooking	Directions:
Dissolved	the	bouillon	cube	in	a	small	saucepan	of	boiling	water.
Cook	the	chicken	over	medium-high	heat	for	approximately	4	minutes	or
until	the	meat	is	cooked	thoroughly.
Stir	occasionally	and	if	desired,	season	the	chicken.
Remove	the	chicken	from	the	pan.	Place	it	in	a	dish,	cover	and	keep
warm.
Cook	zucchini	and	onion	for	approximately	5	minutes	or	until	tender.
Stir	in	garlic	and	cook	for	30	seconds.
Add	the	dissolved	chicken	bouillon	and	water,	along	with	the	chicken.
Heat	for	a	couple	minutes.
Stir	in	the	sour	cream.
	
	
Serving	Instructions,	Tips	&	Variations:	Serve	the	chicken	and	veggies
over	wild	rice.	I	recommend	cooking	the	rice	before	you	cook	the	chicken.
