Chicken Cheeseburgers
Ingredients and Prep:
2 teaspoons vegetable or olive oil, plus more for drizzling 2 tablespoon of
poultry seasoning (See below for a homemade seasoning recipe.) 1 finely
chopped shallot.
2 pounds of ground chicken breast.
4 large muffins or ciabatta rolls.
4 slices of cheese.
Lettuce leaves.
Sliced tomatoes.
Mayonnaise.
Cooking Directions:
Slice the muffins or rolls in half.
Preheat a grill pan over medium-high heat.
Combine chicken, poultry seasoning and shallot.
Divide the meat into 4 equal portions.
Form 4 large patties with an approximate thickness of 3/4 to 1 inch.
Drizzle oil over the patties.
Place the patties on a hot grill pan.
Cook for approximately 5 minutes on each side. The chicken must be
cooked through to the center.
Lay a slice of cheese over each patty.
Turn off the heat and allow the cheese to melt over the patties.
Spread a layer of mayonnaise over the bun tops.
Place the burger patties on bun bottoms and top with lettuce and tomato.
Serving Instructions, Tips & Variations: Serve with rice or chips or
fries.
