Garlic Shrimp and Pepper (GF)
Ingredients and Prep:
3 to 4 tablespoons of olive oil.
1 diced onion.
1 finely chopped green bell pepper.
1 finely chopped red bell pepper.
2 pounds of medium shrimp (cooked).
5 cloves of minced garlic.
Fresh chopped cilantro.
1 avocado.
Lemon juice.
Chili pepper flakes.
Cooking Directions:
Peel, pit and dice the avocado.
If necessary, peel the shrimp and remove the tails.
Place the shrimp in a large mixing bowl.
Add the onion, peppers, chili pepper flakes cilantro, garlic and avocado.
Drizzle olive oil over the ingredients.
Spritz lemon juice on the shrimp before serving.
Serving Instructions, Tips & Variations: Serve chilled.
If desired, add a bit of seasoning with salt and pepper.
Serve on a bed of rice and with a side of salad.
Intensify flavor by covering and refrigerating for about one hour.
