Italian-style	Cod	Fillets	(GF)

	

Ingredients	and	Prep:
1	tablespoon	of	chopped	fresh	parsley.
2	tablespoons	of	olive	oil.
1/2	cup	of	pitted	black	olives.
1/2	cup	of	dry	white	wine.
2	cloves	of	minced	garlic.
1	thinly	sliced	onion.
1	14.5-ounce	can	of	diced	tomatoes.
1	pound	of	cod	fillets.
Salt.
Black	pepper.
Italian	seasoning.

	
	

Cooking	Directions:
Heat	the	oil	over	medium	heat	in	a	large	pan.
Sauté	the	garlic	and	onions.	They	should	be	soft	and	tender.
Add	the	white	wine,	olives,	parsley	and	tomatoes.
Stir	in	a	bit	of	salt,	pepper	and	Italian	seasoning.
Simmer	for	5	minutes.
Place	the	fillets	in	the	sauce	and	simmer	for	approximately	5	minutes.
The	fish	must	be	white	when	done.
	
	
Serving	Instructions,	Tips	&	Variations:	Serves	4	people.
Serve	with	wild	rice	and	mange	tout.
For	those	who	don't	prefer	white	wine,	use	chicken	stock	a	a	substitute.
Use	cornstarch	to	thicken	the	sauce.
Consider	substituting	coconut	oil	for	the	olive	oil.
