Fish	and	Tamarind	Soup	(GF)

	

Ingredients	and	Prep:
1/2	tablespoon	of	crushed	red	pepper.
1/2	tablespoon	of	ground	turmeric.
1	tablespoons	of	vegetable	oil.
1/4	cup	of	tamarind	juice.
6	cups	of	water.
6	stalks	of	ground	lemon	grass.
6	cloves	of	garlic	(crushed).
8	chopped	shallots.
2	pounds	of	red	snapper	fillets.
Salt.
	

	

Cooking	Directions:
Cut	the	red	snapper	fillets	into	1-inch	chunks.
Pour	the	oil	into	a	large	saucepan	and	place	over	medium	heat.
Add	the	chopped	shallots.
Mix	in	the	turmeric,	garlic	and	red	pepper.
Cook	for	approximately	5	minutes.	The	shallots	must	be	soft	and	tender.
Pour	the	water	into	the	saucepan.
Add	the	tamarind	juice,	lemon	grass	and	salt.
Bring	to	a	boil.
Add	the	snapper	once	it	reaches	a	boil.
Cook	for	approximately	10	minutes	and	stir	occasionally.
	
	
Serving	Instructions,	Tips	&	Variations:	When	cooked,	the	red
snapper	should	be	easy	to	flake	with	a	knife	or	fork.
