Red	Pepper	Soup

	

Ingredients	and	Prep:
1/2	tablespoon	of	salt.
1/2	tablespoon	of	ground	black	pepper.
1	tablespoon	of	dried	basil.
1	tablespoon	of	dried	oregano.
1	tablespoon	of	garlic	powder.	
1	(8	-ounce)	package	sliced	fresh	mushrooms.
2	9-ounce	packs	of	uncooked	cheese	tortellini.
2	jars	of	roasted	red	peppers.
2	cans	of	chicken	broth.

	
	

Cooking	Directions:
Place	the	red	peppers	in	a	food	processor.	Blend	until	smooth.
Place	a	large	saucepan	over	medium	heat.
Add	the	broth,	red	peppers	and	mushrooms.
Add	the	basil,	garlic	powder,	oregano,	salt,	and	pepper.
Bring	the	mixture	to	a	boil.
Add	the	tortellini	and	stir.
Cook	for	approximately	8	to	10	minutes.	You	must	cook	until	the	pasta	is
soft	and	tender.

	
	

Serving	Instructions,	Tips	&	Variations:	This	dish	serves	8.
Add	cream	to	thicken	the	consistency	of	this	soup.
If	desired,	use	7	fresh	roasted	peppers	in	place	of	the	canned	variety.
