Serves: 5   You’ll love this simple homemade Greek chicken gyro rec-
                            ipe:  pita wraps  filled with yogurt-marinated  chicken,
                            packed in the flavor of warm spices, with homemade tza-
                            tziki sauce and all the extras you love! Here we cook the
                            Greek chicken in a nonstick skillet, but you can also make
                            it on an outdoor grill or in the oven.

        THE MEDITERRANEAN REFRESH  INGREDIENTS  INSTRUCTIONS



               FOR THE CHICKEN:
                                      1.  First, marinate the chicken. In a big mixing
               1.5 lb. chicken breast
                                      bowl, combine the yogurt, 1 tbsp. of the olive oil,
                                      the red wine vinegar, garlic, oregano, paprika,
               1 cup plain Greek
               yogurt (you can use
                                      cumin, coriander, salt, pepper and cayenne, if
               reduced-fat or fat-
                                      using, and mix well. Add the chicken and mix to
               free Greek yogurt if
               you like)
                                      marinade. Cover and refrigerate for at least
               3 tbsp. extra-virgin   make sure each piece is well coated with the
                                      30 minutes, or overnight.

                                      2.  When ready to cook, heat the remaining
               1 large lemon, juiced
                                      tablespoon olive oil in a nonstick skillet over
               2 tbsp. red wine       medium-high heat until shimmering but not
               vinegar                smoking. Remove the chicken from the marinade
               3 garlic cloves,       and shake off any excess, then add the chicken
               minced                 to the pan. Cook undisturbed on one side for
               1 tbsp. dried oregano  5 minutes, until browned. Use tongs to turn the
                                      chicken over and cook on the other side for
               1 tsp. sweet paprika
                                      another 5 minutes or until chicken is done.
               1 tsp. ground cumin
                                      3.  To assemble the chicken gyros, warm up the
               1 tsp. ground          pita bread in the oven. Spread the tzatziki sauce
               coriander
                                      on top, then add chicken and top with tomato,
               generous pinch         cucumber, green pepper, red onion and olives as
               kosher salt            you like. Squeeze the lemon over, wrap the pita up
