INGREDIENTS            INSTRUCTIONS

               1½ cups almond milk    Combine 1 cup of the almond milk and the
               ¼ cup dark chocolate   chocolate chips in a pot over low heat. Stir to
               chips                  melt the chocolate slowly, making sure not to
               3 tbsp. chia seeds     scald the milk. Stir in the remaining milk and let
                                      cool to room temperature. Pour the chocolate
               ¼ cup raspberries
                                      mixture into 4 serving glasses glass and fold in the
               ¼ cup almonds          chia seeds. Let stand for 15 minutes, then stir
               8 mint leaves          again. Cover and transfer to the refrigerator for at
               (optional)             least 8 hours. When ready to serve, stir the chia
                                      seed mixture and top with the raspberries,
                                      almonds and mint leaves, if using.
