thought about naming these
“Melt-in-Your-Mouth” peanut
butter muffins, but I figured I’d
get into all kinds of legal trouble
toying with that phrase. So I’ll stick
to just what they are: chocolate
muffins studded with peanut butter
and chocolate chips, and drizzled
with just a smidgen of melted
peanut butter. They’re not only my
kind of muffin to pack on a long car
trip, they’re also great for lunch
boxes and for shipping off to the
college dorm.

1 ⁄2 cup creamy peanut butter
1 ⁄2 cup vegetable oil
4 large eggs
1 cup peanut butter chips
1 ⁄2 cup semisweet chocolate chips
PEANUT BUTTER DRIZZLE:
2 ⁄3 cup creamy peanut butter
1 tablespoon confectioners’ sugar
