Special Coronation
Day Soup
The people of Arendelle deserve a soup as special as their
queen. This soup for all seasons warms the belly when
the winter world is under Elsa’s spell, or celebrates the
coming of the spring thaw. Serve with a few Snowflake
Crackers (page 28), if you like.
makes 4 servings
1 tablespoon olive oil 4 cups (960 millilitres) 1 cup (120 grams)
chicken or vegetable frozen peas
1 small onion, diced
stock
1 carrot, diced Freshly ground black
1 cup (80 grams) pepper
1 celery or fennel stalk, canned pinto or white Chopped fresh herbs
diced beans, rinsed and such as parsley or basil
drained
Salt for serving (optional)
½ cup (60 grams) small
pasta, such as ditalini, Freshly grated Parmesan
alphabet, or pastini cheese for serving
