itself, kneading, until smooth, about 2 minutes. Form into a ball, then pat
into a thick disk. Cover in plastic wrap (cling film) and let rest at room
temperature for 30 minutes.
4 On a lightly floured work surface, roll out the disk until it’s about inch
(4 millimetres) thick. Using the snowflake and snowman cutters, cut out as
many shapes as you can and transfer them to the prepared baking sheets.
Gather up the dough scraps, re-roll, and cut out more crackers.
5 Sprinkle the crackers with the remaining 2 tablespoons Parmesan and a little
salt. Bake until golden brown, about 15 minutes. Transfer to a wire rack
and cool completely. Store the crackers in an airtight container at room
temperature for up to 3 days.
