Black eyed Peas



                                         Ingredients




               2 cans Black-Eyed Peas
               1/2 onion, diced
               1 green pepper diced
               2 cloves minced garlic
               2 tbsp red wine vinegar
               2 tbsp lime juice
               1/2 cup soy sauce
               1 cup tomato sauce
               1/4 cup honey
               1 tbsp cumin
               1 tsp thyme


                                         Lagniappe



               In a sauté pan combine the onions, green peppers and cook till the onions
               soften, add the garlic.

               In a blender or processor, combine the vinegar, lime juice, soy sauce, tomato
               sauce, cumin, thyme 1 cup of the bean juice and three tablespoons of olive
               oil and puree until smooth

               Mix the Black Eyed Peas, vegetables and the sauce in a cast iron skillet and
               bake uncovered for two hours.
