Fried okra


                                           Ingredients



               2 pounds sliced Okra
               3/4 cup corn meal
               1/2 cup flour
               1/2 tsp salt
               1/4 cup peanut oil


                                         Lagniappe



               Pre heat oven to 350

               Mix together Okra, corn meal, flour and salt in a large mixing bowl or shake
               in a paper bag. The natural wetness of the Okra should make the mix stick.
               If not make a very thin egg wash, and coat the Okra first.

               In the meantime heat the oil in a cast iron skillet over medium heat

               Add the Okra to the skillet and cook till it begins to brown, about 3 to 4
               minutes).  Once both sides have browned and here’s the trick….

               Place the Okra in the pre heated oven for about 10 minutes to finish getting
               fork tender.
