Grilled

                     Red onion Chutney Relish



                                         Ingredients


               3 large red onions cut into 1/2 inch circles
               Vegetable oil for coating
               1 tbsp plus 1/2 cup brown sugar
               1 tbsp chili powder
               1 tbsp cumin
               1 tbsp curry
               2 tbsp extra virgin olive oil
               1/4 cup vinegar


                                         Lagniappe

               Mix the spices together in a shallow container with 1/2 the brown sugar.

               Coat the onion slices with oil, and dredge them in the spice mixture till they
               are covered fairly well.

               Place onions on grill, and cook till they are golden brown starting to char.
               Move to a cool part of the grill and cook till they are soft (about 15-20
               minutes depending on the heat)

               Remove from the grill and coarsely chop the onions, add them to a pan of hot
               olive oil for about 5-10 minutes. Add the other half brown sugar and the
               cider vinegar bring to a simmer and cook about 10 minutes until slightly
               thickened.
