Emalita’s Mexican corn
“Elote”
Ingredients
Fresh Sweet Corn on the cob in the Husk
¾ cup mayo
¼ cup sour cream
½ tsp salt
¼ tsp cayenne
¼ tsp black pepper
1 cup crushed tortilla chips or Tostitos
Lime wedges
Lagniappe
Combine the first five ingredients to form a paste
Roll the ear of corn in the paste then roll in the crushed chips and season with black
pepper and lime
NOTE: Real Mexican street corn, is just corn dipped in butter seasoned with red
pepper
