Cajun Shrimp and Grits


                                         Ingredients


                                        Essence Seasoning

               2 1/2 tbsp paprika                                     2 tbsp salt
               2 tbsp garlic powder                                 1 tbsp black pepper
               1 tbsp onion powder                                 1 tbsp oregano
               1 tbsp thyme
               ______________________________________________________________

               2 lbs shrimp                                             8 oz Andouille or smoked sausage
               1 chopped onion                                      1 tsp minced garlic
               1 ½ cups chicken broth                            ¼ cup heavy cream
               2 tbsp finely chopped green onions         2 tbsp minced parsley
               3 chopped jalapenos

                                         Lagniappe



               Season the shrimp with the seasoning and sauté along with the chopped
               sausage, remove and sauté the peppers, onion till soft add 2 tsp of the spice
               mix, add the garlic cook till mixed well, add the chicken broth and cook till it
               is slightly reduced.

               Stir in the cream, green onions and parsley into the sauce and return the
               sausage and shrimp to the mixture.  Continue to simmer, season to taste and
               serve over the grits

                                               Grits

               Add 1/1/2 cups of grits to 6 cups of boiling water, salt well and stir, when
               they begin to thicken add 2 cups of milk, ¼ cup heavy cream and a stick of
               butter and return to a boil. Reduce heat and cook for 45minutes or until
               smooth and cream
