                                   Shrimp Creole


                                         Ingredients



               2 lbs Bacon
               2 large yellow onions (diced)
               3 green bell peppers (diced)
               1 bunch Celery (diced)
               12 ½ cups water
               1 46oz tomato puree
               1 46oz tomato juice
               1 pint water
               3 bay leaves
               5 lbs shrimp
               1 lb cooked rice


                              Lagniappe





               Sauté bacon till crisp

               Add vegetables and cook till soft

               Add tomato puree, juice and water.  Simmer for 1 ½ hour

               Add salt and pepper to taste, add the shrimp and continue cooking till they
               are done (10 to 12 minutes)

               Serve over the rice with garlic bread
