Shrimp Mac & Cheese



                                         Ingredients

               1 lb elbow pasta cooked
               8 tbsp butter
               1 lb medium shrimp
               1 tsp Cajun seasoning
               1 tsp grated onion
               3 tbsp flour
               3 cups milk
               ¼ lb parmesan cheese
               ½ lb cheddar cheese
               1 lb Monterey jack cheese
               ¼ cup bread crumbs
               1 tsp parsley
               Splash of white wine



                                         Lagniappe



               Melt the butter in a medium sauce pan.  Add the shrimp and sprinkle with
               some Cajun seasoning.  Cook 3-4 minutes.

               In a separate pan, melt 2 tbsp butter, add the onion and sauté 1 minute whisk
               in the flour and cook for about 1 minute. Add the milk, and heat for about 4
               minutes.  Add the Cheddar and Monterey Jack and cook till smooth.  Add ½
               tsp Cajun seasoning, salt and pepper and the wine

               Stir in the cooked shrimp and pasta, pour into skillet or casserole dish, top
               with Parmesan cheese and the bread crumbs, 3 tbsp melted butter and the
               parsley
               Bake at 350 for 45 minutes
