Shrimp

                                   Black Eyed Pea


                                           Fritters


                                         Ingredients



               (Filling)

               1 Onion
               1 tsp chili powder
               1 cup small shrimp
               Salt & pepper

               (Fritters)
                1 onion
               1 small chili pepper
               1-2 tbsp flour
               Garlic

                                         Lagniappe



               Add the very thin sliced onions to a skillet with oil seasoning with salt and
               chili powder. Cook till golden brown.  Add the shrimp and cook till pink.
               Remove from the heat and set aside.

               To make the fritters drain the Black Eyed Peas and place in a food processor
               along with the roughly chopped onion, garlic and chili pepper.  Process the
               mixture in the blender.  When blended, add the flour by the tsp till the
               mixture is stiff enough to form a ball

               Fry the fritters in oil till they are browned on all sides.  Drain the fritters and
               allow them to drain, split them in half and fill with the shrimp mixture
