Gas grill boys
Creole Bouillabaisse
Ingredients
4 lbs red snapper or flounder 2 lbs shrimp (31-35)
4 bay leaves 2 lbs crawfish meat
12 cleaned crabs 1 cup olive oil
2 cups chopped onions 2 cups chopped celery
1 cup chopped red bell pepper 4 diced tomatoes
¾ cup tomato sauce ¼ cup diced garlic
2 med carrots diced 3 quarts fish stock
2 cups dry white wine 1 tsp thyme
1 cup chopped parsley 1 tsp basil
1 cup chopped green onions
Lagniappe
Pour olive oil into a large stock pot. Layer the onions, celery, bell peppers,
tomatoes, tomato sauce, garlic, bay leaves and carrots.
On top of the vegetables layer the fish, shrimp, crawfish and crabs. Place on
med heat, cover and steam 3 to 5 minutes
Add the stock, white wine, thyme and basil. Bring to a simmer and cook for
30 minutes and remove from heat.
Add the green onions and parsley season to taste
