                                  Cold gazpacho




                                         Ingredients



               ½ cucumbers chopped
               ½ red onion chopped
               1 sliced avocado sliced & chopped
               1 tsp crushed oregano leaves
               3 tbsp olive oil
               2 tbsp red wine vinegar
               2 limes cut into wedges
               4 cups tomato juice

                                       Lagniappe




               Place all the ingredients in a glass type serving bowl,

               Place in refrigerator and allow the mixture to cool and marinate overnight before
               serving.

               Serve cold as an appetizer or in place of a salad.
