                                    Spinach salad


                                         Ingredients



               11/4 cup water                                                ¾ cup sugar
               ¼ cup cider vinegar                                        ½ tsp chicken base
               ¼ tsp white pepper                                          ¼ lb chopped bacon
               ¼ cup chopped onion                                      ¼ tsp flour
               1 lb chopped, stemmed spinach


                                         Lagniappe



               Combine water, sugar, vinegar, salt, soup base, and pepper in a med sauce
               pan, heat to boiling, reduce heat and simmer till ready

               Brown the bacon, chop and set aside.

                Cook the onions in the bacon fat until soft; do not brown

               Add the flour to the onion mixture and stir (about 2 minutes)

               Add onion mix to the sauce pan and continue stirring till the mixture is
               smooth.

               Add the set aside bacon at the very last.

               Divide up the Spinach leaves, pour the hot dressing over the spinach and
               serve.
